We had quite some fun preparing this dinner! And for Wine & The City's last dinner of the summer, we will be taking over their private replica of the Dunhuang Caves (that you have probably never seen) of Lost Heaven Silk road restaurant in Julu Lu.

The Estate was founded in 2014, in a granary beside the church at Tsekou, the birth place of the Catholic mission to the Upper Mekong. This location offers warm summers and cold winters, on poor and stony soils The estate is located amidst the complex and steep geography of the Tibetan Steps in Yunnan province near to Kawa Kharpo, a resplendent mountain chain that climbs to nearly 7,000 metres, a sacred peak for the Tibetan Buddhist faith and one of the natural borders with Tibet Autonomous Region. It is a zone of incredible convergence where great rivers tumble from the roof of the World to meet lost valleys, peoples, ethnic groups and languages, including Burmese, Chinese and Tibetan.

You’ll spend the evening with 20 like-minded people as well as with the Owner Bertrand Cristau and Winemaker Sylvain Pitiot who will share the challenges it takes to make such wines.

LOST HEAVEN SILK ROAD
Lost Heaven is a classic in Shanghai and is probably the most famous face of Yunnan cuisine in the City. Lost heaven Silk Road in Julu Lu is echoing the South China “tea-and-horse trail” the Silk Road served as one of the world’s most important trading paths, snaking from Xi’an in the West all the way through Mongolia, Tibet, Afghanistan, India and Europe. Many of the distinctive regional specialties along this road hail back centuries, and all landed on our table at the restaurant.

This is the first vintage released for XiaoLing Estate’s second label, we will be the first ones to taste it out so no label has been made yet. This wine is lighter and fruitier with the Cizhong terroir signature.

The grapes for XiaoLing are sourced from three hectares of small plots planted between 2,000 and 2,400 meters. Cabernet Sauvignon, Carmenere and Merlot are the key varieties.
Their philosophy is to vinify every parcel and varietal separately. The wine is fermented in small earthenware jars and manually pressed. It is aged for 14 months in French oak barrels.

Same here, no label available as we will be the first ones to taste it out. The Eau de Vie/Brandy is a traditional spirit found in all French wine regions. In Cizhong, the wine and wine lees are triple distilled by local farmers using their QingKeJiu equipment’s. It should reach a level of a minimum alcohol by volume content of 40%.
